Pasta Alla Norma

I decided last week that I'd been spending too much time playing WOW and not enough time cooking, so I went on a binge of clearing out my epicurious recipe box.  First was Pasta Alla Norma, an eggplant pasta dish with a rustico red sauce:



I made a couple of mistakes on this that I would have to fix if I made it again.  First of all, I used WAY too much oil to fry the eggplants.  Eggplants are weird... they suck that oil all up right away but then it comes back.  Second, I also used too much basil, so that the sauce ended up being too sugary and I kept getting big bites that were just basil.  The basil looks and smells good though!
