Sour Cream Bacon Pancakes, with Maple Syrup

Yeah, you read that right, these sour cream based pancakes have bacon in them:


I was going to throw away two slices of bacon left over from last week's carbonara, but then I remembered my joy of cooking brunch and breakfast tip that I could put crumbled bacon in my pancakes. Then I was out of milk, so I had to make the batter with sour cream. Drizzled some maple syrup on there.

Result: AWESOME!

I could only eat 1 of these 3 silver dollar sized pancakes (who knew a bacon and sour cream based pastry would be so rich?) I plan to eat the remaining two cold later with a slice of cheddar cheese, and then perch Mr. Monk on my shoulder to ride out the high.
